Gluten Free Cinnamon Rolls

▶︎ Step 1: Prepare the dough

1 - 250 gr. of ground almonds into a large bowl (00:17)
2 - add 30 gr. of coconut flour (00:18)
3 - add 1 tsp. of baking powder - phosphate-free (00:22)
4 - add a pinch of salt (00:23)
5 - mix all ingredients (00:27)

6 - crack open 2 eggs into a second large bowl (00:32)
7 - beat the eggs (00:36)

8 - melt and add 30 gr. of coconut fat to the eggs (00:44)
9 - add vanilla - a few drops of organic vanilla aroma OR 2 gr. of bourbon vanilla (00:46)
10 - add 1/2 to 1 tbsp. of raw honey OR 30 gr. of erythritol OR 1 to 2 pinches of stevia (00:49) /// TIP for erythritol: melt 30 gr. of erythritol in coconut fats or water before adding.
11 - mix all ingredients (01:02)

13 - mix all ingredients - use a tablespoon (01:21)

▶︎ Step 2: Prepare the filling

1 - add 30 gr. of melted coconut fat into a small bowl (01:43)
2 - add 2 tsp. of cinnamon (01:46)
3 - add vanilla - a few drops of organic vanilla aroma OR 2 gr. of bourbon vanilla (01:50)
4 - add a handful of chopped nuts (01:53)
5 - add 1 tablespoon of nut cream - almond OR cashew (01:58)
6 - OPTIONAL: add 1/2 a tablespoon of raw honey OR 15 gr. of erythritol OR 1 pinch of stevia (02:08)
7 - mix all ingredients - use a tablespoon (02:13)

 

▶︎ Step 3: Prepare the rolls

1 - prepare baking paper - place the dough in the center (02:22)
2 - form a dough-ball (02:32)
3 - press and spread the dough with your hands (02:35)
4 - put a second baking paper on top of the dough (02:42)
5 - roll-out the dough - use a rolling pin (02:43)

6 - remove baking paper (02:56)
7 - form the dough into a disk (02:58)

8 - add and spread the filling evenly - use a tablespoon (03:39)
9 - roll the dough into a cylinder (04:05)

10 - prepare baking paper and small loaf pan for baking (04:40)
11 - cut the cylinder into 5 to 6 rolls (04:45)
12 - place onto the loaf pan (04:53)
13 - add the rest of the filling (05:07)

14 - Baking time and temperature: 15 - 20 minutes at 175ºC / 340ºF

1 - 1 tablespoon of nut cream into a cup - almond OR cashew (05:14)
2 - add 1 tsp. of cinnamon (05:16)
3 - add 2 tbsp. of water (05:17)
4 - mix all ingredients - use a tablespoon (05:20)

5 - add 1 tbsp. of water (05:24)
6 - mix all ingredients - use a tablespoon (05:25)

7 - add 1 tbsp. of water (05:29)
8 - mix all ingredients - use a tablespoon (05:30)
