Here is our beloved recipe for fluffy Gluten Free Buckwheat Pancakes. This pancake recipe is simple and suitable for sweet as well as salty toppings.

Preparation: 10 to 15 minutes
Frying time: 10 minutes (Use butter, coconut oil or ghee butter)

▶︎ Step 1: Preparation of the dough

1 - 75 gr. of butter into a large bowl (00:10)
2 - use a hand held mixer to soften the butter (00:18)
3 - crack open 2 x eggs into the bowl (00:26)
4 - add a pinch of salt (00:29)
5 - mix all the ingredients with a hand held mixer (00:33)

6 - add 1/2 teaspoon of salt (00:42)
7 - add 1 tablespoon of erythritol (00:46)
8 - mix all the ingredients with a tablespoon (00:49)

9 - add 2 teaspoons of baking powder (00:53)
10 - mix all the ingredients with a tablespoon (01:02)

11 - add 200 gr. of buckwheat flour (01:10)
12 - mix all the ingredients with a tablespoon (01:14)

13 - add a bit of the coconut water (01:22)
14 - continue to mix all the ingredients with a tablespoon (01:28)

15 - add a bit more of the coconut water (01:34)
16 - continue to mix all the ingredients with a tablespoon (01:38)

17 - add the rest of the coconut water (01:45)
18 - continue to mix all the ingredients with a tablespoon (01:48)

1 - fry 5 to 6 pancakes on a large pan.(02:00)
