  • 20 - 25 gr. of powdered erythritol (00:18)
  • 2 x eggs (00:37)
  • a pinch of salt (01:03)
  • 100 gr. of ground almonds (almond flour) (01:08)
  • 1 teaspoon of baking powder (01:12)
  • 1 - 2 gr. of vanilla bean powder OR a few drops of organic vanilla flavoring (01:14)
  • 30 gr. of teff flour (01:18)
  • 30 gr. of buckwheat flour (01:24)
  • 120 ml coconut milk (01:40)
  • 20 - 25 gr. of cocoa powder (02:06)
  • Grass-fed butter, ghee OR coconut fats to fry the pancakes

  • large bowl
  • Whisk or hand mixer
  • teaspoon
  • tablespoon
  • cup
  • spatula
  • non-stick fry pan

Preparation time: 10 - 15 minutes
Frying time: 10 minutes

▶︎ Step 1: Prepare the batter

1 - blend 20 to 25 gr. of erythritol if you do not have powdered erythritol (00:18)

2 - crack open 2 eggs into a large bowl (00:37)
3 - add the powdered erythritol (00:45)
4 - beat the eggs with a whisk or a hand mixer (00:51)

5 - add a pinch of salt (01:03)
6 - add a 100 gr. of ground almonds (01:08)
7 - add 1 teaspoon of baking powder (01:12)
8 - add 1 to 2 gr. of bourbon vanilla OR a few drops of vanilla extract (01:14)
9 - add 30 gr. of teff flour (01:18)
10 - add 30 gr. of buckwheat flour (01:24)
11 - mix all ingredients with a tablespoon (01:30)

12 - add a bit of coconut milk (01:39)
13 - continue to mix all ingredients (01:43)

14 - add a bit more coconut milk (01:49)
15 - continue to mix all ingredients (01:55)

16 - add 20 to 25 gr. of cocoa powder (02:05)
17 - continue to mix all ingredients (02:09)

18 - add a bit more of coconut milk if needed (02:23)
19 - continue to mix all ingredients (02:27)
Important: aim for a thick and liquid consistency. (02:37)

 

▶︎ Step 2: Fry the pancakes

1 - prepare a non-stick frying pan
2 - add butter, ghee or coconut fat
3 - fry 8 to 10 American-style pancakes (thick and around 5 cm in diameter) and over low heat! Time: 1 to 2 minutes on every side.

Important: The pancakes fry very fast. Please also use low heat for best taste and nutrients.
