20 to 30 minutes at 175ºC / 340ºF

▶︎ Step 1: Prepare the dough

1 - 120 gr. of coconut flour into a large bowl (00:17)
2 - add 5 gr. lemon zest (00:20)
3 - add 1 tsp. baking powder (00:24)
4 - add 3 tbsp. poppy seeds (00:26)
5 - add a pinch of salt (00:30)
6 - mix all ingredients (00:32)

7 - crack open and add 5 x eggs (00:39)
8 - mix all ingredients (00:54)

9 - add 15 gr. raw honey OR 25 gr. erythritol (01:07)
10 - add 40 gr. melted coconut fat (01:22)
11 - mix all ingredients (01:32)

12 - cut, press and add the juice of 2 small lemons OR 1 big lemon (01:39)
13 - add 2 gr. of bourbon vanilla or a few drops of organic vanilla aroma (01:57)

14 - crack open and add 1 x egg (02:00)
15 - mix all ingredients (02:03)

16 - crack open and add 1 x egg (02:12)
17 - continue to mix with a tablespoon (02:14)

18 - crack open and add 2 x eggs (02:22)
19 - continue to mix
NOTE: If the dough is too dry add a 10th egg.

 

▶︎ Step 2: Prepare for baking

1 - prepare muffin pan and liners - for 6 large muffins or 8 small muffins (02:38)
2 - fill in the muffin liners (02:44)

3 - baking time: 20 to 30 minutes at 175ºC / 340ºF (03:08)

4 - IMPORTANT: cooling time is 30 minutes before adding Creamy Lemon Icing and serving! (04:09)

 

▶︎ Step 3: Prepare Creamy Lemon Icing

1 - 1 x tablespoon of nut cream into a cup (03:13)
2 - cut, press and add the juice of 1 small lemons OR 1/2 big lemon (03:20)
3 - mix all ingredients - use a tablespoon (03:32)

4 - add 1 tbsp. water (03:42)
5 - continue to mix (03:45)

6 - add 1 tbsp. water (03:58)
7 - continue to mix until creamy (04:00)

 

▶︎ Step 4: Prepare for serving

1 - take the muffins out of the muffin pan (04:09)
2 - cooling time is 30 minutes before adding Creamy Lemon Icing and serving! (04:09)
