  • 70 gr. of fresh or frozen spinach
  • 3 eggs preferably organic
  • salt
  • pepper
  • fresh or dried garlic
  • 150 gr. of buckwheat flour
  • 200 gr. (200 ml.) of coconut milk
  • coconut fat/oil

▷ Equipment:

  • large bowl
  • blender
  • bowl
  • Scale
  • cup
  • Tablespoon
  • small or mid-sized fry pan
  • spatula
  • teaspoon

Preparation time: 7 - 10 minutes
Frying time: 7 - 10 minutes

▶︎ Step 1: Prepare the batter

1 - add 70 gr. of fresh or frozen spinach into a blender (00:03)
2 - add 3 eggs (00:05)
3 - add a pinch of salt (00:14)
4 - add a pinch of pepper (00:19)
5 - add a pinch of garlic (00:21)
6 - blend all ingredients for 10 to 20 seconds (00:26)

7 - add 150 gr. of buckwheat flour to the blender (00:34)
8 - blend all ingredients for 10 to 15 seconds (00:39)

10 - add 200 gr. (200 ml.) of coconut milk to the blender (00:46)
11 - blend all ingredients for 10 to 15 seconds (00:37)

12 - add to a bowl (01:07)

Note: aim for consistency that is not too thin or too thick.

▶︎ Step 2: Fry the pancakes

1 - add coconut fat/oil on a small or mid-sized frying pan (01:02)
2 - preheat and melt over low heat (01:02)

2 - fry 5 - 7 pancakes over low heat (01:17)

3 - serve on a plate (01:21)
4 - add your favourite low carb, paleo or vegan toppings (01:23)
