  • 1/2 Hokkaido Pumpkin (Squash) approx. 700 gr.
  • 4 x eggs (preferably organic)
  • 200 gr.ground almonds (almond flour)
  • 2 tsp. baking powder (phosphate-free)
  • 1 to 2 tsp. spices of your choice: dried paprika, basil, garlic and onions
  • 2 tsp. of curry
  • 2 tbsp. of flaxseed flour
  • 2 - 3 pinches of salt
  • 1 tbsp. avocado oil
  • 90 ml / gr. coconut milk
  • coconut fat (alternatives: ghee or butter)

  • tablespoon
  • teaspoon
  • chef's knife
  • grater
  • large bowl
  • waffle iron
  • plate

Grain-Free Pumpkin Waffles

▶︎ Step 1: Prepare the dough

1 - Spoon out 1/2 Hokkaido Pumpkin (00:10)
2 - remove the peel carefully. Tip: Microwave the pumpkin with water to make cutting easier. (00:27)

4 - grate the pumpkin into a large bowl (01:14)

5 - crack open 4 x eggs into the bowl (01:25)
6 - add 200 gr. grounded almonds to the mix (01:40)
7 - add 2 tsp. of baking powder (01:43)
8 - add spices of your choice: dried paprika, basil, onions and garlic (01:46)
9 - add 2 tsp. of curry (01:50)
10 - add 2 tbsp. of flaxseed flour (01:57)
11 - add 2 - 3 pinches of salt (02:00)

1 - Preheat waffle iron - medium heat (02:47)
