Grain-Free Vegetarian Pie

Here are the instructions for this one of a kind "Grain-Free Vegetarian Pie". You will need the following ingredients:

▶︎ Ingredients & Equipment:

▷ Ingredients for the topping:

  • 200 gr. mushrooms
  • 1 x aubergine (eggplant)
  • 2 x scallions
  • a bunch of fresh parsley
  • dried parsley (handful)
  • 125 gr. goat or sheep yoghurt
  • 2 - 3 pinches of black pepper
  • 2 - 3 pinches of salt

Preparation time: 20 minutes
Baking time: 35 - 45 minutes at 175°C / 340°F

▶︎ Step 1: Preparation of the topping

1 - Slice 200 gr. of mushrooms into slices (00:12)
2 - add to a large bowl (00:21)

3 - peel-off and dice 1 x aubergine (eggplant) into small pieces (00:24)
4 - remember: dice into small pieces (00:47)
5 - add to the bowl (01:13)

6 - chop 2 x scallions into small pieces (01:18)
7 - add into a second large bowl (01:29)

8 - mince a handful of fresh parsley into small pieces (01:33)
9 - add to the bowl as well as all chopped vegetables (01:37)
10 - mix with your hands (01:42)

11 - add a handful of dried parsley (01:50)
12 - add 2 - 3 pinches of black pepper (01:56)
13 - add 2 - 3 pinches of salt (02:01)
14 - add 125 gr. of goat or sheep yoghurt (02:08)
15 - mix all ingredients with a tablespoon (02:24)

▶︎ Step 2: Preparation of the dough

1 - 150 gr. of buckwheat flour into a large bowl (02:38)
2 - add 2 - 3 pinches of salt (02:43)
3 - add a handful of dried parsley (02:49)
4 - add 2 - 3 pinches of black pepper (02:53)
5 - add 1 x tablespoon of avocado oil, ghee butter of olive oil (03:00)
6 - mix all ingredients (03:06)

7 - add 1/2 glass of water (03:09)

8 - continue to mix (03:13) 
9 - IMPORTANT: If dough is too liquid add 1 - 2 tablespoons of buckwheat flour. Look for a thick consistency. (03:19)
 

▶︎ Step 3: Preparation of the pie

1 - prepare a baking paper and put the dough in the center (03:33)
2 - flour the dough with buckwheat flour (03:50)
3 - form a dough-ball with your hands (03:56)
4 - flour the rolling-pin with buckwheat flour (04:09)
5 - roll-out the dough (04:18)

6 - use more flour to reduce stickiness (04:20)
7 - form a large and thin piecrust (04:42)

8 - add the mixed vegetables on top (04:50)
9 - IMPORTANT: Leave enough space to form the pie edge - approx. two fingers wide. (05:05)

10 - form the pie edge with your hands (05:12)
11 - use buckwheat flour around the edge (05:36)

12 - prepare for baking: use a baking sheet (05:54)

13 - EGG WASH: beat 1 x egg and brush it on top of the pie edge (06:05)

14 - Bake for 35 - 45 minutes at 175°C / 340°F (06:27)
