  • 600 gr. of unsalted butter (preferably grass-fed butter)

▷ Equipment:

  • a fine cheese cloth (unbleached)
  • a soup pot
  • a heat resistant glass jar

Preparation time: 40 to 90 minutes (The time varies depending on your cooker)
Cooling time: 12 hours

▶︎ Step by step tutorial:

1 - cut the butter into chunks (00:17)
2 - set heat on medium-low (00:34)
3 - add the butter to the pan (00:40)
4 - melt the butter carefully. Use a wooden spoon to stir. (00:48)
5 - As soon as it begins to boil, set the heat to the lowest level possible! - Important: do not continue to stir until finished. (01:17)
6 - scrape off the milk solids on top and on the sides every now and then. (01:31)
