Homemade Grain Free Snickers Bars

▷ Ingredients for the cake base:

  • 200 gr. of ground almonds (almond flour)
  • 25 gr. of melted coconut fat
  • a pinch of salt
  • organic vanilla aroma (sugar-free) OR 2 gr. of vanilla bean powder
  • 1/2 TBSP of raw honey (alternatives: 25 gr. Erythritol OR 5 - 8 chopped dates)
  • 2 - 3 TBSP of water

▷ Ingredients for the nut cream:

  • 5 - 8 dates
  • 25 gr. of melted coconut fat
  • 3 TBSP of nut cream - almond butter or cashew butter
  • 2 x handful of peanuts (sugar-free and unsalted)
  • 120 gr. dark chocolate - 85% to 99%

▷ Equipment:

  • 2 x large bowls
  • baking paper
  • small loaf pan
  • Tablespoon

Total preparation time: 30 minutes
Baking time: 7 - 10 minutes at 175ºC / 340ºF
Cooling time: 10 minutes

Freezing time: 30 minutes

 
Homemade Grain Free Snickers Bars

▶︎ Step 1: Prepare Cake Base

1 - 200 gr. of ground almonds into a large bowl (00:20)
2 - add 25 gr. of melted coconut fats (00:23)
3 - add a pinch of salt (00:28)
4 - add a few drops of organic vanilla aroma OR 2 gr. of bourbon vanilla (00:30)
5 - add 1/2 TBSP of raw honey (00:33)
6 - mix all ingredients (00:42)

7 - knead the dough (00:47)

8 - add 2 - 3 TBSP of water to the dough (00:57)
9 - continue to knead the dough (01:03)
10 - prepare baking paper and small loaf pan (01:14)

11 - place dough inside the loaf pan (01:20) 
12 - press and spread dough evenly (01:25)

13 - baking time: 7 - 10 minutes at 175 °C / 340 °F (01:47)

14 - cool down: 10 minutes

 

▶︎ Step 2: Prepare nut cream

1 - chop 5 to 8 dates in a blender and add into a large bowl (01:49)
2 - add 25 gr. of melted coconut fats (01:52)
3 - add 2 TBSP of nut cream - almond of cashew cream (01:58)
4 - mix all ingredients (02:06)

5 - add 1 TBSP of nut cream - almond of cashew cream (02:16)
6 - add a handful of peanuts (02:22)
7 - mix all ingredients (02:24)

 

Step 3: Prepare for freezing

1 - prepare the cake base (02:37)
2 - add the nut cream layer on top (02:40)
3 - spread evenly (02:47)

4 - melt 120 gr. of dark chocolate - 85% to 99% (03:13)

5 - add melted chocolate evenly on top of the nut cream (03:26)
6 - sprinkle a handful of peanuts on top of the chocolate (03:54)
