Grain-Free Almond Cookies - with Lemon and Vanilla Recipe
This is the original Fit Chick Bakery Almond Cookies recipe. If you love the taste of lemon then try this quick recipe at home.
▶︎ Ingredients & Equipment
200 gr. of ground almonds (almond flour)
25 gr. of erythritol
2 gr. of baking powder (phosphate free)
7 gr. of lemon peel (sugar free)
2 gr. of vanilla bean powder, or a few drops of organic vanilla flavoring (organic and sugar free)
30 gr. of fresh lemon juice
Preparation: 5 to 10 minutes
Baking time: 10 to 12 minutes at 170°C / 330°F
▶︎ Step 1: Preparation
00:09 - 200gr. ground almonds into a large bowl
00:15 - add 25gr. erythritol
00:17 - add 2gr. baking powder (phosphate-free)
00:21 - add 7gr. lemon zest (sugar-free)
00:25 - add 2gr. bourbon vanilla OR a few drops of organic vanilla aroma.
00:29 - stir to mix
00:34 - add 30gr. of fresh lemon juice
00:50 - stir to mix
00:55 - knead the dough with your hands
01:07 - prepare a baking paper
01:10 - form balls with your hands (6 to 8 balls)
01:31 - press gently on top of the cookies with a cookies stamp or the palm of your hands
01:41 - bake for 10 to 12 minutes at 170°C / 330°F
01:52 - Ready!
