Grain-free Vegan Chia Seeds Bread Recipe

Here is the recipe for our flavourful Grain-free Vegan Chia Seeds Bread. It's one of the recipes that we keep baking at least once a week. It's simple and full of flavour since we are using chia seeds, sunflower seeds and flaxseeds combined with almond flour and parsley.

▷ Ingredients:

  • 10 tablespoons of Chia seeds

  • water 500 gr. / ml.

  • 180 gr. of ground almonds (almond flour)

  • 200 gr. of buckwheat flour

  • 2 - 3 pinches of salt

  • a handful of fresh or dried parsley

  • 3 x teaspoons of phosphate-free baking powder

  • a handful of pumpkin seeds

  • 4 x tablespoons of sunflower seeds

  • 3 x tablespoons of flaxseeds

  • 3 x tablespoons of apple cider vinegar

▷ Equipment:

  • small bowl

  • tablespoon

  • cup

  • large bowl

  • teaspoon

  • baking paper

  • loaf pan

  • bread's knife

Preparation time: 15 - 20 minutes
Baking temperature: 175ºC / 340ºF
Baking time: 40 to 50 minutes

Cooling time: 20 minutes

▶︎ Step 1: Prepare the dough

1 - add 10 tablespoons of chia seeds into a small bowl (00:01)
2 - cover the chia seeds with water - approximately 150 gr. / ml (00:12)

3 - add 180 gr. of ground almonds into a second large bowl (00:18)
4 - add 200 gr. of buckwheat flour (00:23)
5 - add 2 - 3 pinches of salt (00:27)
6 - add a handful of fresh or dried parsley (00:35)
7 - add 3 teaspoons of baking powder (00:44)
8 - add a handful of pumpkin seeds (00:49)
9 - add 4 tablespoons of sunflower seeds (00:52)
10 - add 3 tablespoons of flaxseeds (01:02)
11 - mix all ingredients with a tablespoon (01:10)

12 - add 200 gr. of water (01:21)
13 - continue to mix (01:25)

14 - add 3 tablespoons of apple cider vinegar (01:34)
15 - AND: add the chia seeds from the beginning (01:39)
16 - add 150 gr. of water (01:50)
17 - continue to mix (01:54)

 

▶︎ Step 2: Prepare for baking

1 - Preheat oven at 175ºC / 340ºF

2 - Prepare loaf pan and place a baking sheet into the loaf pan (02:21)
3 - fill-in the loaf pan with the dough (02:30)
4 - spread the dough evenly (02:34)

 

▶︎ Step 3: Baking time and temperature

1 - bake for 40 to 50 minutes at 175ºC / 340ºF
