Ingredients & Equipment

▷ Ingredients:

  • 130 gr. dates - pitted and softened
  • 250 gr. cashew nut cream
  • 5 gr. lemon zest
  • 1 vanilla bean OR 2 gr. of vanilla bean powder
  • 5 teaspoons of coconut oil
  • 520 gr. coconut cream
  • 2 - 3 pinches of salt
  • 1/4 cup of warm water
  • handful of cocoa nibs

▷ Equipment:

  • blender or food processor
  • tablespoon
  • large bowl
  • grater or grinder
  • cup
  • small loaf pan

Freezing time: 6 - 8 hours (freeze overnight)

Preparation

▶︎ Step 1: Prepare the Cream

1 - blend 130 gr. of pitted and softened dates (00:09)

2 - add 250 gr. of cashew nut cream into a large mixing bowl (00:23)

3 - add 5 gr. of lemon zest (00:33)

4 - grate or grind 1 vanilla bean or add 2 - 4 gr. of vanilla bean powder (00:36)

5 - add 3/4th of the blended dates (00:42)

6 - add 5 teaspoons of coconut oil (00:48)

7 - add 520 gr. of coconut cream (00:56)

8 - blend all ingredients (01:06)

▶︎ Step 2: Prepare the salty caramel

1 - add 2 - 3 pinches of salt to the rest of the blended dates (01:18)

2 - add 1/4 cup of warm water (01:24)

3 - blend all ingredients (01:28)

▶︎ Step 3: Prepare ice cream

1 - prepare a small loaf pan (01:35)

2 - fill in and spread the 1st layer of cream - use only 1/3 of the cream (01:36)

3 - add 3 to 4 tablespoons of salty caramel sauce and spread evenly - use 1/3 only of the salty caramel (01:45)

4 - add and spread the 2nd layer of cream (02:01)

5 - add 3 to 4 tablespoons of salty caramel sauce and spread evenly (02:10)

6 - add and spread the 3rd layer of cream (02:27)

7 - add the rest of the salty caramel sauce and spread evenly (02:37)

8 - sprinkle a handful of cocoa nibs on top (02:57)

9 - freeze overnight or for 6 - 8 hours (03:13)
